Chicken Masala (My Way)

Best thing about cooking is that, there are no set of rules to go by, you make changes as you go. That is why I would just guide you how I make it, you can experiment it yourself.

Chicken Masala


Marination of Chicken

  1. Chicken
  2. Plain Curd/Yogurt
  3. Indian Chicken Masala / Garam Masala
  4. Paprika/Red Chili Powder
  5. Coriander Powder
  6. Turmeric Powder
  7. Ginger Garlic Paste
  8. Lemon
  9. Salt


  1. Onion Diced into small Cubes
  2. Green Chili
  3. Ginger Garlic Paste
  4. Chicken Masala /
  5. Oil
  6. Cream ( to make it creamy/give it rich taste)

Marination Steps

I normally try to marinate chicken for a day, if I m in hurry then One Hour is must. this helps chicken to soak in all the flavors. Here are the steps

Marinating Chicken

  1. Take Curd/Yogurt and Add all the Ingredients mentioned above, I understand I have not mentioned any Quantity here, because you can go with your own gut feeling here. I normally use enough Curd to immerse chicken in it.
  2. Add other spices according to your taste.
  3. I use little Ginger Garlic Paste, because sometime it overpowers rest of the dish.
  4. Lemon softens the meat and helps for better marination.
  5. Mixed everything with Chicken.

Making Masala

  1. Heat Oil on Pan
  2. Add chopped Onion, Green Chilies ( You could also Grind the Onion and Chili to paste and use it) and Ginger Garlic Paste
  3. Cook them until Onions are brown
  4. Add Chicken Masala & Salt
  5. Empty all the Marinated Chicken with Curd Mix.
  6. Let it cook for 15 mins in medium heat.
  7. Check chicken if it is cooked, leave it to cook for sometime if not cooked.
  8. Taste Chicken Masala, if you like add Cream to your taste
