Chole (Chickpea) Masala

Trying to be more regular at Blogging, So I will put up the Recipes of Curries and Masala, I make at my Apartment here in Bangkok. I made Chole this week, so here is  the recipe.

Chole Masala



Soak Chickpea in water overnight. If this step is done, it will help you cook Chickpea quickly.

Ingredients :

  • For Boiling:
    • 250gm Soaked Chickpea
    • 1 tsp Baking Soda
    • 1 Tea Bag
    • Water
    • 1 Chopped Potato ( Optional)
  • Masala Mix
    • 1 tbs Chola Masala or Garam Masala
    • 1 tbs Cumin Powder
    • 1 tbs Coriander Powder
    • 1 tbs Red Chili Powder ( Or use Green Chili for Thadka)
    • 1 tbs Turmeric Powder
    • 1 tbs Ginger Garlic Paste
    • 3 Spoons of Ghee (Pasteurized Butter)
  • For Thadka
    • 2 Chopped Onions
    • Tomato Puree
    • 1 Cup of Plain Yogurt
    • Oil
    • Water ( Optional)

Preparation : 

  • Step 1:
    • Boil the Soaked Chickpea (Chole) with Baking Soda and Tea Bag.
    • Baking Soda would help Chickpea Soak more water and Cook thoroughly.
    • Tea Bag would give Brownish Color and help neutralize Baking Soda.
    • Can add One Chopped Potato if you like.
  • Step 2:
    • Mix all the ingredients of Masala – Chola Masala/Garam Masala, Cumin, Coriander, Chili and Turmeric Powder, Ginger Garlic Paste
    • Add the mix to Boiled Chickpea (Chole)
    • Mix them all well.
    • Heat Ghee and add to the mix.
  • Step 3:
    • Head Oil and Onion, Head them till it is brown.
    • Once Onion is brown, Add Tomato Puree and Yogurt to the mix.
    • Cook them well.
    • Add Chickpea (Chole) Mix to this.
    • Cook it for 10 minutes.
    • Can Add Water if you want to make it like Curry. (This is optional)

Mom Special : Malai Thadka

This is one of the most easiest dishes to make and tastes yummy with Parathas.

Malai Thadka


Ingredients :

  • 2 Chopped Onion
  • 2 Chopped Tomatos
  • 2 Green Chillis
  • Cooking Oil
  • Malai ( Cooking Cream)
  • Haldi ( Turmeric )
  • Salt

Preparation :

  • Heat the Oil
  • Add Chopped Onion and Green Chillis
  • Once the Onion are Brown, Add chopped Tomatos.
  • Add Haldi and Salt.
  • Add Malai, Heat for 2 minutes.
  • And You are Ready with Malai Thadka.

This might look bit too simple, but believe me this is one of my favorite dishes with Paratha.

Paneer Capsicum Masala ( Chilli Paneer )

I will try to be very generic in this recipe. You can twist and turn it based on your own liking. There are two main part to preparation of this dish, Frying Paneer and Making Sauce

Paneer Capsicum Masala


Part 1 : Frying Paneer

Ingredients :

  • 250 gm cottage cheese (Paneer)
  • 3 Tbsp cornflour
  • 5 Tbsp all-purpose flour (Maida)
  • Water
  • Oil to Fry
  • Salt to taste

Optional: (You can Add your own flavor)

  • Simple Crushed Black Pepper
  • Coriander Powder, Red Chilli Powder, Garam Masala, Chat Masala

I know the optional part looks bit crazy. Just add based on your taste. I personally went for Red Chilli Powder and Garam Masala.

Preparation :

  1. Prepare a paste mixing All-purpose flour, Cornflour and salt, add the Optional Mix according to your flavor.
  2. Add water slowly and make sure the paste is neither to thick  nor too waterly.
  3. Dip Panner in the mix such that it form a nice coating on it.
  4. Fry the Panner on Oil, until it is light brown.

Note:- You can do the same for any vegetable, example you can do the same to boiled  Potato or cauliflower. Dip them into the mix and fry it.

Part 2: Making Sauce

Ingredients :

  • 2 Medium sized capsicum
  • 1 Big onion
  • 2 Red chilies soaked in water, 1 ginger, 1 garlic (can use Ginger-Garlic Paste too)
  • 1 Tbsp chopped garlic
  • 4 small green chilies
  • 2 Tbsp tomato ketchup
  • 1 Tomato + 1 Small Onion ( Make into Puree)
  • Water
  • Cooking oil
  • Haldi, Garam Masala, Cumin and Coriander Powder ( If you dont use red chilies use Red Chili Powder)
  • Salt to taste

Preparation :

  1. Cut Capsicum and Onion into equal size
  2. Prepare the Red Chili Paste with Ginger and Garlic. (Or use Ginger Garlic Paste with Red Chili Powder)
  3. Prepare Puree with 1 Tomato and 1 Onion
  4. Heat Oil and Add the Puree. The mix will be done once Water in the mix evaporates and become more like paste.
  5. Add Red Chili, Garlic and Ginger Paste and Haldi, Garam Masala, Cumin and Coriander Powder
  6. Add Cut Onion and cook until brown.
  7. Add Capsicum and Tomato ketchup.
  8. Add Salt to Taste
  9. Add Fried Paneer to mix.

Note:- You can omit all the spices and just go with simple Haldi and Salt too. Its up to you to make the dish that suits your taste. There are no hard rules to follow here. Enjoy the Meal.
