Lebanese Tabouli Salad

This is simple quick salad recipe, I make this mostly at night to cut my carbs cravings.

  • Ingredients
    • 1/2 Cup Couscous
    • 1 teaspoon Cumin Powder
    • 1 teaspoon Paprika/Red Chilly
    • 2 Cups of cut Parsley or 3 Bunches Parsley
    • 1/4 Cup of cut Coriander
    • 1/4 Cup of cut Mint
    • 1 Cup of Diced Tomatoes
    • 1 Cup of Diced Cucumber
    • 2-3 Green Chilly (Optional)
    • 1 Clove of Garlic
    • 1 bunch of Spring Onion
    • 3-4 tablespoons of Lemon/Lime
    • 1 tablespoon of Honey ( Optional)
    • 1/4 cup of Extra Virgin Olive Oil
    • Salt to taste
  • Preparing Couscous
    • Mix Couscous, Cumin and Paprika in a bowl
    • Pinch of Salt
    • Cover with warm water by 1/2 inch
    • Soak for 20 minutes, until softened
    • Squeeze out excess water after 20 mins
  • Preparing the Salad
    • In large bowl, take minced garlic, lemon and Extra Virgin Olive Oil
    • Add Honey and mix all the content well (Optional)
    • Add parsley, coriander, spring onion & mint
    • Add green chili (Optional)
    • Add diced Tomatoes and Cucumber
    • Mix the content well

You Tabouli Salad is ready. Enjoy.
