This is simple quick salad recipe, I make this mostly at night to cut my carbs cravings.
- Ingredients
- 1/2 Cup Couscous
- 1 teaspoon Cumin Powder
- 1 teaspoon Paprika/Red Chilly
- 2 Cups of cut Parsley or 3 Bunches Parsley
- 1/4 Cup of cut Coriander
- 1/4 Cup of cut Mint
- 1 Cup of Diced Tomatoes
- 1 Cup of Diced Cucumber
- 2-3 Green Chilly (Optional)
- 1 Clove of Garlic
- 1 bunch of Spring Onion
- 3-4 tablespoons of Lemon/Lime
- 1 tablespoon of Honey ( Optional)
- 1/4 cup of Extra Virgin Olive Oil
- Salt to taste
- Preparing Couscous
- Mix Couscous, Cumin and Paprika in a bowl
- Pinch of Salt
- Cover with warm water by 1/2 inch
- Soak for 20 minutes, until softened
- Squeeze out excess water after 20 mins
- Preparing the Salad
- In large bowl, take minced garlic, lemon and Extra Virgin Olive Oil
- Add Honey and mix all the content well (Optional)
- Add parsley, coriander, spring onion & mint
- Add green chili (Optional)
- Add diced Tomatoes and Cucumber
- Mix the content well
You Tabouli Salad is ready. Enjoy.
