Kale Chane (Black Chickpea) Curry/Masala

Kale Chane is every Saturday affair at our Home. I missed them since I moved to Bangkok.  Any Dal or Chana Masala that I make are bit challanging if we we don’t have Pressure Cooker. My Recipe here is made without it. So here is my Kale Chane Recipe.

  • Ingredients
    • 1 1/2 cup Kala Chana (Black Chickpeas )
    • 3 cup Water for soaking
    • 2 Onions
    • 2 Tomatoes
    • 1″ Ginger Paste
    • 4 Cloves Garlic Paste
    • 4 Green Chili Pepper minced
    • 1 tbsp Oil
    • 1 tsp Cumin seeds
    • 1/3 Cup of Coriander
  • Spices
    • Pinch of Hing (Asafoetida)
    • 1 tbsp Chana Masala (or Garam Masala)
    • 1/2 tsp Jeera powder (Cumin Powder)
    • 1/2 tsp Amchur (Dry Mango Powder) ,
    • 1 tsp Dhania Powder (Coriander Powder )
    • 1/2 tsp Haldi Powder (Turmeric Powder )
    • 1 tsp Red chilli Powder
    • Salt to taste

    • First thing to do when you decide to make Kale Chane (Black Chickpea) soak 1 1/2 cup Kala Chana overnight.
    • Grind 1/2 Cup well Soaked Kala Chana, 2 Chilies, Diced Tomatoes, 1″ Ginger and 4 Cloves Garlic, Make into fine paste.
    • Dice 2 Onions, 2 Chilies
  • Cooking
    • Heat Oil in Pan.
    • Add Cumin seeds, 2 Onion and 2 Chilies – Cook it until Onion turn brown.
    • Add the paste made above.
    • Add all the spices cook for 5 minutes.
    • Add 1 Cup of Kala Chana to the mix.
    • Add 3 Cups of Water and Cook the mix for 20 minutes.
    • Once cooked Garnish the Curry with Coriander.


Makki Di Roti aka Corn Roti

A few Days back I shared Sarso Da Saag Recipe, now let me complete the meal by giving you the recipe for Makki Di Roti. No Saag Recipe is complete without Makki Di Roti.

  • IngredientsPSX_20190429_150209
    • 1 1/2 Cup of Makki Flour
    • 1/2 Cup of Wheat Flour
    • Coriander Leaf
    • 2 Finely Chopped Chilies
    • Dried Methi
    • Ajwain
    • Warm Water
    • Salt
    • Oil/Ghee
  • Preparation
    • Mix the two flours and add warm water
    • Knead the dough
    • Add coriander leaves, Dried Methi, Ajwain and salt
    • One Dough is done. Make into small Balls
    • Roll the Dough Balls into Round Rotis
    • Add Ghee on Pan
    • Cook your Makki Di Roti

Serve Makki Di Roti with Saag or Just have it with Curd or Butter.

Easy Egg Spinach on Bread

There are times when you don’t want to cook but you are craving for something delicious. This is one of those quick Breakfast or Dinner Recipes.

  • Ingredients :
    With Bread
    • 1 Cup of Spinach
    • 1 Egg
    • 1 Onion Chopped
    • 1 Tomato Chopped
    • 1 green chili ( Optional – I like it Spicy so I added it)
    • Black Pepper
    • Oregano Flakes
    • Salt to taste
    • 1/2 tablespoon Olive Oil
    • 2 slice of Bread
    • Parmesan Cheese (Optional)


  • Preparation :
    With Tomatoes
    • Heat Olive Oil on Pan
    • Add Onion, Green Chillies.
    • Cook Onion till it turns light brown
    • Add Spinach and cook it for 5 minutes
    • Add Egg
    • Once Egg is done
    • Add nicely diced Tomato, and cook it for 2 minutes
    • Take the mixture out of Stove
    • Add Parmesan Cheese, Mix all well

Serve the mixture on top of Toasted Bread.

There is another way you can Serve this, you can take a whole Tomato to cut it half. Take the seeds out and fill in the mixture. You can either Bake the Tomato or Heat it on Pan for 2 Minutes and Serve.

Cheese Chicken Spinach Macaroni

I got a huge pack of Macaroni a few months back, so there is back to back Macaroni Recipes 🙂 Here is the next one.

    • 200 grams Chicken ( One Chicken Breast)
    • 200 grams Macaroni
    • 2 Cup of Spinach
    • 1 Onion Chopped
    • 2 cloves of Garlic
    • 2 green chilies
    • Black Pepper
    • Oregano Flakes
    • Paprika Powder
    • Parsley flakes (Optional)
    • Salt to taste
    • 200 ml Cooking Cream
    • 1 Cup Parmesan Cheese

    • Cut Chicken into Small Cubes
    • Marinate the Chicken with Black Pepper, Oregano, Parsley, Paprika and Salt (keep it aside for 30 mins)
    • Heat Olive Oil on Pan
    • Add Onion, Spinach, Garlic, Green Chillies.
    • Add Chicken cook it
    • Add Cooking Cream
    • Add Macaroni
    • Add Parmesan Cheese
    • Cook Macaroni for 10-12 Mins

Macaroni Chicken Soup

Here is a Quick Recipe for Macaroni Chicken Soup. You can make this in Microwave.

So here is this recipe :.

  • Ingredients :Jaggi's Kitchen_190619_0009
    • 100 grams Chicken ( Half Chicken Breast)
    • 100 grams Macaroni
    • 1 Onion Chopped
    • 1 Tomato Chopped.
    • 2 green chillies
    • 2 small Carrot
    • Corriander for garnishing
    • Black Pepper
    • Organo Flakes
    • Salt to taste
    • Water
  • Preparation (On Pot):Jaggi's Kitchen_190619_0014
    • Heat Pot of Water, after 5 mins add Macaroni and Chicken
    • Add Onion, Tomato, Green Chillies, Carrots
    • Add Organo, Black Pepper, Salt
    • Macaroni Soup should be done by 10-12 Mins.
  • Preparation (in Microwave):
    • Add all the content in a bowl that fits well.
    • Keep microwave for 10-12 mins.

Garnish Dish with Corriander . The Dish turned out really well. Perfect when you are bit sick. 🙂 Enjoy. Do comment if you tried the dish.


Chocolate Brownie in Microwave

This is a quick Chocolate Brownie recipe to satisfy sweet tooth.

  • Ingredients :IMG_20190506_124335
    • 2 tbsp Sugar
    • 3 tbsp Milk
    • 1/2 tsp Vanilla Essence
    • 2 tbsp Oil
    • 3 tbsp All-Purpose Flour
    • 3 tbsp Cocoa Powder
    • Pinch of Salt


  • Preparation:
    • Add Sugar, Milk and Vanilla Essence in a small glass bowl and mix them well
    • Add Oil, All-Purpose Flour and Cocoa Powder (with small pinch of salt)
    • Mix them all well until there are no lumps
    • Cook the Mix in Microwave for 1 minute.

Voila it’s Done! Add Wipped Cream, Coco Chips, Nuts. Enjoy.

Plain Kulcha

Ever since I had Kulchas in Amritsar during trip to Harmandir Sahib ( Golden Temple) I wanted to know and make Kulchas myself. This did not happen until this Sunday. So here is the recipe I followed.

  • Ingredients Dough :
    • 2 Cups of Wheat Flour
    • 1 Cup All-Purpose Flour
    • 1 and 1/2 Cup of Milk
    • 1/2 tsp of Baking Powder
    • 2 tbsp Butter
    • 2 tbsp of Sugar
    • Salt to taste
  • Ingredients for Garnish
    • 1/2 Cup of Chopped Coriander.
    • 4 Chopped Green Chilies
    • 4 Chopped Cloves of Garlic
    • 1 tsp of Ajwain
    • 2 1/2 tbsp of Butter


  • Preparation of Dough:
    • Mix Wheat Flour, All Purpose Flour, Butter, Baking Powder,  Salt, Sugar
    • Add Milk in small quantities and Knead the dough
    • Once done, roll the dough flat, spread a layer of butter and fold the dough, do this one more. ( this will form a layer of dough and butter)
    • Once done,  roll the dough straight, and Cut into small Balls to make Kulcha.

    • Roll the Ball into a round shape. Add the Garnish of your liking.
    • I used, Coriander, Chilies, and Garlic in One
    • Ajwain in One.
    • On a heated Pan, Cook the Kulcha.

Enjoy Kulcha, You can fill it with Onion, Potatoes, or Paneer. Make Onion Kulcha, Allu Kulcha or Paneer Kulcha.

Thai Spicy Minced Meat Aka Laap Moo/Kai

IMG_20190424_024224_228It would be wrong of me not to cook and post few of Thai Dish Recipes. Here is one of my favourite Thai Dish. Goes really well with Rice. One of main ingreditents of this dish is ‘Rosedee Menu’ LAAB Powder.

So here is this recipe Thai Spicy Minced Meat ( Pork Or Chicken ).

  • Ingredients :
    • 200 grams of Meat(Pork/Chicken).
    • 2 Red Onions or Shallots
    • Mint Leaves.
    • 1 pack of ‘Rosedee Menu’ LAAB
    • 3 tablespoons of water.


  • Preparation :
    • Cook the Meat with 3 tablespoons of Water.
    • Add 1 ‘Rosedee Menu’ LAAB pack and mix them well.
    • Add Onion and Mint Leaves.

Serve with Dish with Rice Enjoy. Looking forward to share more Thai Dishes in future.

Sarso Da Saag

If there was one Dish that every Punjabi Home look forward to in winters is Sarso Da Saag with Makki De Roti. If I could give it a english name it would be “Mashed Mustard/Spinach with Spices”. Does not sound good but it is the best thing to have in Winters. Here in Bangkok, I found Mustard Leaves in April, so could not wait to make Sarso Da Saag. Here is the Recipe. Enjoy.


Ingredients :

  • Main :
    • 1 bunch Mustard Leaves (250 gms) (Sarson)
    • 1 bunch Spinach Leaves (250 gms) (Palak)
    • 1 Cup fenugreek leaves, chopped
    • 1 Inch Ginger, Chopped
    • 4 Garlic Cloves, Chopped
    • 4 Green Chilli, Chopped
  • Thadka
    • 1 tsp of Oil
    • 1 tsp Cumin Seeds
    • 3 Dried Chillis
    • 1 Inch Ginger, Chopped
    • 4 Garlic Cloves, Chopped
    • 2 Medium Size Onion, chopped
    • 3 Medium Size Tomatoes, chopped

Preparation : 

  • Step 1: Main – Cooking
    • Take Mustard, Spinach Leaves, in Pot of Water
    • Add Garlic Cloves, Ginger and Green Chillies
    • Boil the mix until Cooked.
  • Step 2: Main – Grinding
    • Once the Mix is Cooked, let it cool down.
    • Grind the Mix into a Paste
  • Step 3: Thadka
    • Add 1 tsp of Oil on Hot Pan
    • Add Cumin and Dried Chillies
    • Add Chopped Onions Cook them till they are brown.
    • Add Chopped Tomatoes Cook them well
    • Add Turmeric, Chilli Powder, Garam Masala
    • Add 1 Cup fenugreek leaves
    • Cook them all in low flame for 10 mins, Add little water if Thadka gets too dry.
  • Step 4: Mix All
    • Add the Mix of Mustard and Spinach to Thadka.
    • Mix all well and let it Cook for 10 mins in low flame.
    • Add little Cream or Malai ( Optional)

Dal Chutney

I have lived most of my life in South India, and grown to love Dosa! So when I moved to Bangkok for work, I could cook Sambar, Dal Tadka, and Chicken Curries but I missed Chutney. One key ingredient which I need was dry Coconut which I could not find easily at nearby Super Market. I tried to use coconut milk and fresh coconut it did not taste the same. So I started making Dal Chutney, which I loved. So here are the Ingredient and Steps to make Dal Chutney.

Ingredients :

  • Main :
    • 5 tsp of Roasted Chana Dal
    • 2 tsp grated coconut (Optional)
    • 2 Green Chillis
    • Half inch of Ginger
    • 4-5 tsp of Water
  • Thadka
    • 1/2 tsp of Oil
    • 1 tps Mustard Seeds
    • 3 dried Chillis
    • 4 Curry Leaves

Preparation : 

  • Step 1:
    • Boil the Soaked Chickpea (Chole) with Baking Soda and Tea Bag.
    • Baking Soda would help Chickpea Soak more water and Cook thoroughly.
    • Tea Bag would give Brownish Color and help neutralize Baking Soda.
    • Can add One Chopped Potato if you like.
  • Step 2:
    • Mix all the ingredients of Masala – Chola Masala/Garam Masala, Cumin, Coriander, Chili and Turmeric Powder, Ginger Garlic Paste
    • Add the mix to Boiled Chickpea (Chole)
    • Mix them all well.
    • Heat Ghee and add to the mix.
  • Step 3:
    • Head Oil and Onion, Head them till it is brown.
    • Once Onion is brown, Add Tomato Puree and Yogurt to the mix.
    • Cook them well.
    • Add Chickpea (Chole) Mix to this.
    • Cook it for 10 minutes.
    • Can Add Water if you want to make it like Curry. (This is optional)
