Kulche on Tawa


Let’s make Kulche, a very popular Indian Bread which is eaten with Chole or boiled Yellow Matar. This recipe is pretty simple and is made on a tawa and the best part is you don’t need of a tandoor to make these.


  • Warm water – ½ cup
  • Sugar – 2 tsp
  • Yeast – 2 tsp
  • Maida / All purpose flour – 2 cups
  • Milk powder – 2 tbsp
  • Salt Butter – 2 tsp
  • Dry flour – ¼ cup
  • Water – to brush
  • Butter – to roast
  • Fresh Green Coriander Leaves – to garnish


  1. Firstly, in a large mixing bowl take warm water,  add the sugar and yeast and keep it aside for 10min and you will notice it is frothy and that means it is ready.
  2. Now to this yeast, add maida, milk powder, salt, and butter
  3. Mix well and knead it into a soft non sticky dough
  4. cover and rest for one-hour or until it has doubled
  5. take some dry flour in your hands and punch the dough
  6. pinch a ball sized dough and gently roll into an oval shape using a rolling pin.
  7. sprinkle some Coriander leaves
  8. brush it with water and put it waterside down on the tawa
  9. cover it for a few seconds
  10. again apply water on another side and slowly flip the kulcha and cover again
  11. Remove the lid and now brush some butter and roast with the help of a turner.
  12. Kulcha is ready to be served with Matar/Pindi Chole, onion salad, and chaas.

Chole (Chickpea) Masala

Trying to be more regular at Blogging, So I will put up the Recipes of Curries and Masala, I make at my Apartment here in Bangkok. I made Chole this week, so here is  the recipe.

Chole Masala



Soak Chickpea in water overnight. If this step is done, it will help you cook Chickpea quickly.

Ingredients :

  • For Boiling:
    • 250gm Soaked Chickpea
    • 1 tsp Baking Soda
    • 1 Tea Bag
    • Water
    • 1 Chopped Potato ( Optional)
  • Masala Mix
    • 1 tbs Chola Masala or Garam Masala
    • 1 tbs Cumin Powder
    • 1 tbs Coriander Powder
    • 1 tbs Red Chili Powder ( Or use Green Chili for Thadka)
    • 1 tbs Turmeric Powder
    • 1 tbs Ginger Garlic Paste
    • 3 Spoons of Ghee (Pasteurized Butter)
  • For Thadka
    • 2 Chopped Onions
    • Tomato Puree
    • 1 Cup of Plain Yogurt
    • Oil
    • Water ( Optional)

Preparation : 

  • Step 1:
    • Boil the Soaked Chickpea (Chole) with Baking Soda and Tea Bag.
    • Baking Soda would help Chickpea Soak more water and Cook thoroughly.
    • Tea Bag would give Brownish Color and help neutralize Baking Soda.
    • Can add One Chopped Potato if you like.
  • Step 2:
    • Mix all the ingredients of Masala – Chola Masala/Garam Masala, Cumin, Coriander, Chili and Turmeric Powder, Ginger Garlic Paste
    • Add the mix to Boiled Chickpea (Chole)
    • Mix them all well.
    • Heat Ghee and add to the mix.
  • Step 3:
    • Head Oil and Onion, Head them till it is brown.
    • Once Onion is brown, Add Tomato Puree and Yogurt to the mix.
    • Cook them well.
    • Add Chickpea (Chole) Mix to this.
    • Cook it for 10 minutes.
    • Can Add Water if you want to make it like Curry. (This is optional)

Mom Special : Malai Thadka

This is one of the most easiest dishes to make and tastes yummy with Parathas.

Malai Thadka


Ingredients :

  • 2 Chopped Onion
  • 2 Chopped Tomatos
  • 2 Green Chillis
  • Cooking Oil
  • Malai ( Cooking Cream)
  • Haldi ( Turmeric )
  • Salt

Preparation :

  • Heat the Oil
  • Add Chopped Onion and Green Chillis
  • Once the Onion are Brown, Add chopped Tomatos.
  • Add Haldi and Salt.
  • Add Malai, Heat for 2 minutes.
  • And You are Ready with Malai Thadka.

This might look bit too simple, but believe me this is one of my favorite dishes with Paratha.

Paneer Capsicum Masala ( Chilli Paneer )

I will try to be very generic in this recipe. You can twist and turn it based on your own liking. There are two main part to preparation of this dish, Frying Paneer and Making Sauce

Paneer Capsicum Masala


Part 1 : Frying Paneer

Ingredients :

  • 250 gm cottage cheese (Paneer)
  • 3 Tbsp cornflour
  • 5 Tbsp all-purpose flour (Maida)
  • Water
  • Oil to Fry
  • Salt to taste

Optional: (You can Add your own flavor)

  • Simple Crushed Black Pepper
  • Coriander Powder, Red Chilli Powder, Garam Masala, Chat Masala

I know the optional part looks bit crazy. Just add based on your taste. I personally went for Red Chilli Powder and Garam Masala.

Preparation :

  1. Prepare a paste mixing All-purpose flour, Cornflour and salt, add the Optional Mix according to your flavor.
  2. Add water slowly and make sure the paste is neither to thick  nor too waterly.
  3. Dip Panner in the mix such that it form a nice coating on it.
  4. Fry the Panner on Oil, until it is light brown.

Note:- You can do the same for any vegetable, example you can do the same to boiled  Potato or cauliflower. Dip them into the mix and fry it.

Part 2: Making Sauce

Ingredients :

  • 2 Medium sized capsicum
  • 1 Big onion
  • 2 Red chilies soaked in water, 1 ginger, 1 garlic (can use Ginger-Garlic Paste too)
  • 1 Tbsp chopped garlic
  • 4 small green chilies
  • 2 Tbsp tomato ketchup
  • 1 Tomato + 1 Small Onion ( Make into Puree)
  • Water
  • Cooking oil
  • Haldi, Garam Masala, Cumin and Coriander Powder ( If you dont use red chilies use Red Chili Powder)
  • Salt to taste

Preparation :

  1. Cut Capsicum and Onion into equal size
  2. Prepare the Red Chili Paste with Ginger and Garlic. (Or use Ginger Garlic Paste with Red Chili Powder)
  3. Prepare Puree with 1 Tomato and 1 Onion
  4. Heat Oil and Add the Puree. The mix will be done once Water in the mix evaporates and become more like paste.
  5. Add Red Chili, Garlic and Ginger Paste and Haldi, Garam Masala, Cumin and Coriander Powder
  6. Add Cut Onion and cook until brown.
  7. Add Capsicum and Tomato ketchup.
  8. Add Salt to Taste
  9. Add Fried Paneer to mix.

Note:- You can omit all the spices and just go with simple Haldi and Salt too. Its up to you to make the dish that suits your taste. There are no hard rules to follow here. Enjoy the Meal.


Chicken Masala (My Way)

Best thing about cooking is that, there are no set of rules to go by, you make changes as you go. That is why I would just guide you how I make it, you can experiment it yourself.

Chicken Masala


Marination of Chicken

  1. Chicken
  2. Plain Curd/Yogurt
  3. Indian Chicken Masala / Garam Masala
  4. Paprika/Red Chili Powder
  5. Coriander Powder
  6. Turmeric Powder
  7. Ginger Garlic Paste
  8. Lemon
  9. Salt


  1. Onion Diced into small Cubes
  2. Green Chili
  3. Ginger Garlic Paste
  4. Chicken Masala /
  5. Oil
  6. Cream ( to make it creamy/give it rich taste)

Marination Steps

I normally try to marinate chicken for a day, if I m in hurry then One Hour is must. this helps chicken to soak in all the flavors. Here are the steps

Marinating Chicken

  1. Take Curd/Yogurt and Add all the Ingredients mentioned above, I understand I have not mentioned any Quantity here, because you can go with your own gut feeling here. I normally use enough Curd to immerse chicken in it.
  2. Add other spices according to your taste.
  3. I use little Ginger Garlic Paste, because sometime it overpowers rest of the dish.
  4. Lemon softens the meat and helps for better marination.
  5. Mixed everything with Chicken.

Making Masala

  1. Heat Oil on Pan
  2. Add chopped Onion, Green Chilies ( You could also Grind the Onion and Chili to paste and use it) and Ginger Garlic Paste
  3. Cook them until Onions are brown
  4. Add Chicken Masala & Salt
  5. Empty all the Marinated Chicken with Curd Mix.
  6. Let it cook for 15 mins in medium heat.
  7. Check chicken if it is cooked, leave it to cook for sometime if not cooked.
  8. Taste Chicken Masala, if you like add Cream to your taste

Home Made Red Wine ( Indian Edition)

To all the Wine Enthusiasts in India, Hopefully this article would help you make your own

Love the Color

wine at Home. Before we start, here are some interesting facts to pump you up.


  • Wine making is one of the oldest skills recorded in history.
  • It is a fun hobby to have, and a very good conversation starter
  • You can gift them to your friends with your own custom labels

Note before you start :

  1. It is going to take around 45 days to make wine, so be prepared. (21 Days
  2. Be calm, don’t be over excited and open the wine jar during fermentation
  3. Get someone to help you.
  4. Cleanliness is number One rule in Wine making

Now lets start with very Basics

Basically Sugar breaks down into Alcohol, Heat and Water.

Lets start making Wine

Ingredients :

  1. Black/Purple/Red Grapes: 1.5 Kg  – I got the best result with seedless grapes, Grapes
    Whole Wheat/Yeast/Sugar

    with seeds made my wine very bitter. If you want a good color for your wine, make sure when you get nice dark colored Grapes.

  2. Sugar: 1 Kg – Simple white sugar would do add less if grapes are already sweet.
  3. Yeast: 15 grams – Any simple “Activated dry yeast” would do. But do make sure it has not expired. And if form or bubbles are not formed when mixed with lukewarm water, that means you don’t have good Yeast. You can find it along with Baking goods in supermarket.
  4. Whole wheat: 50 grams – It is called Kanak in Punjabi/ And Gahu in Hindi. Can find in supermarket.
  5. Water: 2.5 liters – Distilled/Filtered Water.


  1. Ceramic Jar – They are the jars in which every Indian household stores Pickle(Achar). I will be posting a picture to let you know how it looks like. Get Appx 5 Liter one or more. (Based on the ratio of your ingredients)
  2. One Wooden Ladle – I prefer Wooden tools to be used here because they would be non reactive with the Wine.
  3. Old Wine Bottle – When making wine do it properly. Collect some Wine Bottles, bottling your wine in them would look awesome.
  4. For Filtration: One Normal Large Filter and One Fine Filter


Dividing the steps into 3 parts

  1. Cleaning
  2. Wine Making
  3. Filtration & Bottling


  1. One of the Golden Rule is keeping everything clean & Sterilized.IMG_6934
  2. Heat some water and clean the Ceramic Jar, and Dry it well. I would advise you NOT to take old Pickle Jar at home, because it would still have Pickle smell and odor. Get a new Jar, Sterilize it with hot water. ( If you follow Western Blogs, they use some kind of powder called PBW (Powdered Brewery Wash) or some other powder mix to clean it)
  3. Wash the grapes well, remove all the stems, branches or rotten grapes from the lot. Wash it with warm water, we need to get rid of any dust, mud, wax or chemicals out of the grapes. (No matter you get the grapes from roadside or supermarket, clean them well).
  4. Clean whole wheat grains properly. Drain the water few times and clean it again properly.

Wine Making:-

  1. Take all the grapes in the Ceramic Jar and smash them, with a wooden ladle or you
    can use your hand too. (Make sure you wear gloves, if you use your hands). Note:- You don’t have to make Juice out of them, you just have to just crack them.
  2. Add the sugar, You don’t need to add complete 1 Kg, as it is too much. This depends on how Sweet your Grapes are.
  3. Add some Filtered Water, mix them well.
  4. Yeast for Fermentation :- Take Lukewarm Water in a bowl, add 2 tsp of Yeast. Mix the content well. You can add little sugar if you want. Wait for 10 Mins, you would see bubbles forming in the bowl of Yeast. (Be patient here, Once I used old Yeast and did not get very good results.)
  5. Add Yeast to the mix
  6. Add Whole Wheat (Kanak/Gahu) into the Jar
  7. Mix all the content well, until sugar dissolves.
  8. Close the lid with plastic cover make it air tight and keep it in a dark room.

Day to Day Activities :-

There is set of daily duties that you have to do in order to make wine, here is it.

  1. Every day for 21 days you, have to do this. IMG_20130407_152949
  2. Open the Lid and Air tight cover carefully
  3. What you will see is that Grapes have come up and you cannot see anything liquid.
  4. This is a good sign, which means fermentation has started.
  5. With a Wooden ladle stir the mix slowly.
  6. Once done, again close the lid airtight.
  7. Repeat this for 21 days.( Actually it is not exactly 21 days, you will notice that one day grapes no longer rise up this mean that main fermentation has stopped. You can continue doing it for some more days and then stop)
  8. After this we start with Filtration and Bottling


Filtration & Bottling

  1. After 21 days (Or when Fermentation is done), empty the content of the Jar into a FB_IMG_1456709496315container which would hold the wine, I used small size bucket. Make you have washed the Bucket with hot water to sterilize it.
  2. Now filter the Content using filter with Normal size Filter. (Similar to one used when pouring tea, but a lot bigger one)
  3. This would remove all grapes peals/ Wheat Seeds.
  4. Once done use Fine Filter to filter the content again. Now all you will have is watery Wine. Still there would be some suspended particle. But that’s alright in secondary fermentation the particles would settle down at the bottom and you will have fine wine ready.
  5. Once filtration is done, leave the wine for 20 more days, this would help in particles in the wine to settle down.
  6. Taste the wine, before you close. If you see need of adding sugar, add it. (I have never add it, but the site, I learnt from, mentions it.
  7. Keep Old Wine Bottles ready, washed and Sterilized.
  8. On 45th Day, use a small pipe(one used in Aquariums) , dip one end in Wine Jar (Make sure you don’t put the pipe all the way down, just one the surface) and other end in Old Wine Bottle. Suck the pipe let the wine flow, from Jar to Bottle. You will get clear wine you have been waiting for.


Let me list out some basic things that I have learnt making wine at home.

My Personal Learning:-

  1. Don’t go to some Western Websites and see How they make wine. Their process IMG_20130512_011711would be lot more advance since they have all equipment handy. All that would just confuse you more.
  2. First time keep it simple.
  3. I had tried making wine with Different kind of grapes. Seeded and Without Seed. Best result was with Without Seed Grapes. So I would recommend you to use that only for best result.
  4. I also tried to add some spices in wine like Cardamom, Cloves & Cinnamon Sticks, that too did not come out very well. Not that it would not come out well for you too. Just heads up.

Simple Homemade Wheat Biscuits


It has been great cooking since Mom has come to Bangalore, we have been religiously cooking something different every weekends. It feels great when something comes out great. Everyday Mom shows something new she saw in YouTube. 🙂IMG_20151017_164839

Now back to today’s Recipe : Wheat Biscuits – This is very simple recipe


  • 1 Cup Wheat Flour
  • 1/2 Cup Powder Sugar
  • 1/2 Cup Unsalted Butter
  • 1 Tea teaspoon Baking Powder
  • 1/4 Cold Milk


  • Mix Wheat, Powdered Sugar and Baking Powder in a bowl.
  • Add Unsalted Butter to the Mix
  • Add Cold Milk to the mix it well.
  • Once the dough is ready.
  • Roll the Dough thin and using Glass or any shapes you have make biscuits.
  • Note:- What we have noticed is best shape for Biscuits is round. Any other shape is easily burnt.
  • Put some dry wheat flour on the Tray you are going to use and arrange your biscuits there.
  • Keep Oven at 150 degree Celsius for 10 Minutes.
  • Once done let the Biscuits cool down.

Mom Special : Bread Pizza (without Cheese)

It has been time since I last posted any Food recipe, here is my way to apologize. Last some months, Mom and Dad are at home with me. This has been one of the best time in recent time. And now that Mom is here, Chef Jagdeep has gone to relax mode. 🙂

Here we are making Bread Pizza, which actually one of my favorite dish that Mom makes. From now will try to post some of my mom’s favorite dishes along with some of my experiments. For now enjoy the Bread Pizza.


  1. 6 Slices of Bread
  2. 1/2 Cup of Cream (Malai)
  3. 1/4 Cup of Semolina (Sooji)
  4. Vegetables
    1. 1 Onion
    2. 1 Tomatoes
    3. 1/2 Capsicum
    4. 1 – Green Chilies
  5. Salt/Pepper to taste


Final Bread Pizza

  1. Mix all the vegetables with Cream and Sooji. (Sooji helps to bind Cream and Vegetable together)
  2. Apply the Creamy paste on Slices of Bread
  3. Heat the Slice of Bread with the Paste on Pan.

Done. Your bread Pizza is ready to Eat.

There are number of Experiments you could do with this. You could add number of add-on like small pieces of cooked chicken, Boiled Corn, Carrot, if you do like Cheese go ahead add some on top of this.

Honey Chilli Potatoes

Something for Vegetarian to enjoy

Honey Chilli Potatoes


For the potatoes:

  • 2 potatoes, peeled and sliced
  • 3-4 Tbsp Maida
  • Corn flour
  • Salt, to taste
  • 1 tsp red chilli powder
  • Oil, for deep frying

For the base:ching-secret-sweet-chilli-sauce

  • 1 tsp oil
  • 2 spring onions/ Onion, sliced
  • 1 Green or Red capsicum, sliced
  • 1 garlic Cloves
  • 2 Tbsp honey / 2 tsp chilli sauce ( Or You could use Ching’s Sweet and Chilli Sause)
  • Salt, to taste
  • 1/4 tsp soya sauce

Deep Fry potatoes:

  1. Add maida, Corn flour, salt and red chilli powder in bowl
  2. Add the sliced potatoes. Mix well till potatoes are coated.
  3. Deep fry till golden.

Making the Sause Mix:

  1. In a pan add oil, crushed garlic cloves.11102026_10155618030335541_8895081073996128997_n
  2. Add spring onions/Onions.
  3. Can add crushed Green Chilli if you like it hot ( Optional )
  4. Heat for 1 or 2 minute.
  5. Add capsicum, salt and soya sauce. Saute.
  6. Add Ching’s Sweet and Chilli Sause or Honey & Chilli Sause
  7. Add deep fried potatoes. Mix.

Serve it as Starter or with Rice. Enjoy

Thai Basil Chicken

Yet another Basil Recipe. This is because I love it and I grow it in my garden. 😀

Thai Basil Chicken


  • 2 Cups basil leaves10987570_10155269646215541_4650674510459486923_n
  • 200 gms Boneless Chicken
  • 3-4 Garlic cloves (Use according to your Taste)
  • 3-4 Fresh Red or Green Chilli
  • 2 Teaspoons of Soya Sauce
  • 1 Teaspoon of Sugar
  • 2 Teaspoons of Oyster Sauce
  • Olive Oil


  1. Crush Garlic Cloves and Green/Red Chilli.
  2. Heat a Pan with Olive Oil and add the mix.
  3. Cut Chicken to fine small pieces.
  4. Add Chicken to the Pan, Mix the content well.
  5. Add 1 Teaspoon of Soya Sause, 2 Teaspoons of Soya Sauce and Sugar.
  6. Mix them all well.
  7. Add fresh Basil Leaves to the pan.

Serve the Basil Chicken with Rice and Egg.
